Stack the tortillas on top of each other. Using a sharp knife, cut some of the top part of the tortilla off to make a pumpkin stem.
On one tortilla, cut out eyes, a nose, and a mouth.
Arrange cheese on top of the tortilla without the face. Top with the other tortilla.
Optional first step: Put the quesadilla in an oven-safe skillet over medium-high heat with the full tortilla (not the cut ouon the bottom. Cook for 2 minutes. Transfer skillet to oven and broil for 2 minutes.
Or skip the stove-top step and just put on a baking sheet. Broil for 3-4 minutes. Be careful to make sure it doesn't burn under the broiler.
Enjoy dipped in salsa.
