Mexican Fried Quinoa is a fun take on a great dish to use your leftovers

Ingredients
1tablespoonolive oil
1mediumoniondiced
1mediumbell pepperdiced
2 ½teaspoonchili powder
1teaspoonpaprika
½teaspooncumin
½teaspoongarlic powder
¼teaspoondried oregano
¼teaspooncayenne pepper
¼teaspoonsalt
½cupdiced green onion
3cupscooked quinoa
2tablespoonapple cider vinegar
2cupscooked ground beef or turkey meat
sliced avocadosgrated cheese, and/or chopped cilantro, for serving
Instructions
Heat olive oil in a large skillet. Sauté onion and bell pepper until soft, about 7 minutes. Stir in chili powder, paprika, cumin, garlic powder, dried oregano, cayenne pepper, salt, and green onion.
Once everything is well combined, add in quinoa. Cook, stirring occasionally, for about 5 minutes. Stir in vinegar and ground meat, and cook until heated through. Serve with sliced avocados, grated cheese, and/or chopped cilantro. Enjoy!
Notes
*Makes 6 cups.*Use about 10-12 ounces uncooked ground turkey or beef meat if you don't have already cooked meat.*To make quinoa, cook about 1 cup of uncooked quinoa in 2 cups water.
