2largeonionsdiced
1mediumgreen bell pepperdiced
2clovesgarlicminced
1.5poundsskinless chicken thighs
1teaspoonoregano
1teaspoonchili powder
¾teaspoonsalt
½teaspooncumin
½teaspoongarlic powder
½teaspoonpaprika
½teaspooncoriander
¼teaspoondill
¼teaspoonblack pepper
¼teaspooncayenne pepper
1cupunsalted chicken broth or water
Instructions
Add all of the ingredients into a slow cooker in the order listed. Cover and cook on Low for 5-6 hours, until chicken is done.
Take out chicken and shred. Put shredded chicken back into slow cooker and cook on High for 30 minutes.
Serve as tacos, with chips, or over lettuce.
Notes
*You can use chicken breasts in place of the chicken thighs. It will cost a little more.*If you don't have all these spices, you can substitute all of the spices with a packet of taco seasoning + ranch seasoning. Note that the sodium content will increase significantly. *Other veggies like carrots or celery can be used in place of the onion and/or bell pepper. Or double the onions and skip bell peppers, or vice versa.
