Great for Halloween, you can use cookie cutters to cut out shapes to make cute sandwiches. Use regular paprika if you don't want smoky pimento cheese.

Ingredients
8ounceblock cheddar cheeseI like Cabot, {do not get shredded, please!}
½cupcottage cheese
1.5tablespoongrated onion {plus the juices that come with it}
4ouncejar diced pimentosdrained
⅛teaspooncayenne pepper
¼teaspoonsmoked paprika {optional but gives it the smoky flavor}
14sliceswhole grain breadtoasted & cut into shapes with cookie cutters {if making sandwiches}
Instructions
Grate the cheese into a medium bowl. Set aside.
Put the cottage cheese in a blender or mini food processor. Blend until smooth. Add to the bowl of cheese.
Stir in the grated onion & juices and pimentos. Stir well to combine. Season with cayenne pepper and smoked paprika {if using}.
Let sit in the refrigerator for at least 2 hours for flavors to combine.
To make sandwiches, spread about ¼ cup on one slice of bread and top with other slice of bread. Cut in half or use a cookie cutter to make shapes. Repeat with remaining pimento cheese and bread.
Notes
*Recipe makes 1 ¾ cup pimento cheese. Each whole sandwich will need about ¼ cup pimento cheese.
*Alternately, serve the pimento cheese as a dip/spread or grilled cheese.
