    These pizza bits are a simple snack or appetizer recipe full of veggies

    Yesterday evening I posted about cooking for one, so I thought I'd give you another recipe to help you along in your 'cooking for one' journey.

    I love pizza, but it takes a little more effort and isn't always healthy.

    Fortunately these easy to make pizza bites are full of veggies, so they are healthy! Also, the entire recipe is under 200 calories, so it's a great snack. In fact, this is a great appetizer/snack for one or two people.

    Zucchini is really good in the summer and easy to find, so you won't have any trouble with hard to find ingredients. It's basically just three ingredients: zucchini, pizza sauce, and cheese.

    I mean it's hardly a recipe, but they are delicious so I didn't want to keep the recipe to myself.

    I recommend eating these pretty soon after baking them as the zucchini flavor comes out a little more as they cool. However, if you like zucchini, that shouldn't be a problem.

    Zucchini Pizza Bites

    These pizza bits are a simple snack or appetizer recipe full of veggies

    Ingredients

    • 1 medium zucchini thinly sliced
    • 1/3 cup pizza sauce
    • 1/4 cup shredded mozzarella cheese

    Instructions

    • Preheat the oven {or toaster oven} to 400°F. Line a baking sheet with foil or parchment for easier cleanup if desired.
    • Place the zucchini slices on the prepared baking sheet in a single layer.
    • Spoon about 1 tsp pizza sauce on each zucchini slice and spread it over the slice.
    • Sprinkle the cheese evenly over the zucchini slices.
    • Bake for 7 minutes in the preheated oven or until cheese is lightly browned and bubbly.
    • Let sit for a minute or two before eating. Enjoy!
