    About Mini Zucchini Pizzas

Snacks often lack veggies, but these zucchini pizza bites make up for it.

Using a whole zucchini that is sliced into bite-sized pieces, and then topped with pizza sauce and cheese, you'll get veggies, flavor, and protein in one!

They are a tasty and fun way to enjoy extra vegetables.

I love that these zucchini pizza bites can be made in the air fryer, oven, or toaster oven.

Plus, you get satisfying protein and fiber to help you feel full at snack time.

The recipe serves one but can easily be multiplied to make more.

zucchini, bowl of shredded cheese, bowl of pizza sauce with text overlay describing ingredients.

    Ingredients

Zucchini: You'll need one fresh zucchini. A medium-sized zucchini was used for testing, so adjust the pizza sauce and cheese amounts as needed.

Pizza sauce: Use either pizza sauce, pasta sauce, or marinara sauce. In a pinch, you could use tomato sauce. However, plain tomato sauce can be a bit acidic, and you might want to add a pinch of salt, sugar, and/or Italian seasoning to give it more flavor.

Cheese: Mozzarella, cheddar, parmesan, and Monterey jack cheese are all good cheese options. Freshly grated cheese will give more flavor, but it's not mandatory.

    Recipe Cost

    • zucchini 1 medium: $0.78
    • pizza sauce ⅓ cup: $0.42
    • cheddar cheese ¼ cup: $0.30

TOTAL COST: $ or $/serving (Based on San Diego grocery stores 2023)

How to Make Baked Zucchini Pizza Bites

    Time needed: 17 minutes

Making these oven-baked zucchini pizza bites is super simple. Here's how:

    1. Slice a zucchini squash into ⅛-inch thick slices.

    2. Top each slice with pizza sauce, and sprinkle with cheese.

    3. Put on a baking sheet, and transfer to the oven.

    4. Remove from the oven, and enjoy

How to Make Air Fryer Zucchini Pizza Bites

You can also these zucchini pizza bites in the air fryer.

    1. Slice a zucchini squash into ⅛-inch thick slices.
    2. Top each slice with pizza sauce, and sprinkle with cheese.
    3. Place them in one layer in the air fryer.

    Recipe Tips

    Variations

    Ingredient Options

Toppings: Want to change this up or add more flavor? Feel free to add a pepperoni, olive slices, or crumbled sausage.

    Alternative Prep & Cooking

You can prepare these in the oven, toaster oven, or air fryer. See the recipe directions below for how to cook in each.

    How to Make Allergy-Friendly

These mini zucchini pizza bites are naturally gluten-free, egg-free, soy-free, and nut-free. To make them dairy-free, use dairy-free cheese.

Also, check that the pizza sauce doesn't have any ingredients you are looking to avoid.

If you want a lower-sodium option, try making your own low-sodium pizza sauce.

    How to Fix a Mistake

Too much pizza sauce: If it feels like there is too much pizza sauce, spoon some off before adding the cheese.

Too much cheese: No such thing 🤣 But if you find that the cheese is falling off the zucchini slices, that's ok! The cheese will bake into a crispy shell around the zucchini slices and make them extra tasty.

    Make-Ahead Ideas

I recommend eating these pretty soon after baking them as the zucchini flavor is a lot stronger as they cool.

    Storage Suggestions

These are best enjoyed right after baking. However, you can store them in an airtight container in the fridge, preferably in one layer, for up to 4 days.

Reheat in the oven, air fryer, toaster oven, or microwave.
