Ingredients

chicken thighs
boneless, skinless

bay leaves
▢

teaspoon
black peppercorns

cloves
garlic
smashed

tablespoon
rice wine vinegar
or any vinegar

tablespoon
water
▢

tablespoon
soy sauce
or tamari sauce

cilantro lime rice and beans
for serving, optional
Instructions
Add the diced onions to the bottom of a slow cooker. Top the onions with the chicken.
Put the bay leaves, peppercorns, and smashed garlic in a cheesecloth or coffee filter. Place in the slow cooker.
In a small bowl, stir together vinegar, water, and soy sauce. Pour evenly over the chicken in the slow cooker.
Cover and cook for 4 hours on high or 6 hours on low.
Serve over
Cilantro Lime Rice and Beans
, mashed potatoes, quinoa, or with a slice of bread to soak up the juices
