Ingredients
1.5poundspotatoesabout 4 medium potatoes
1tablespoonoil
1teaspooncurry powder
¼teaspoongarlic powder
¼ teaspooncayenne pepper
¼teaspoonsalt
Instructions
Fill a large bowl with hot water. Chop the potatoes and add them to the bowl.
Preheat the oven to 400℉. Line a baking sheet with foil, and place it in the oven to preheat.
Drain the potatoes and dry them (and the bowl) with a dish towel.
Toss the potatoes with oil, curry powder, cayenne pepper, and salt.
Carefully remove the baking sheet from the oven, and spread the potatoes in a single layer on the hot baking sheet.
Transfer to the oven, and roast for 20 minutes.
Stir the potatoes and roast for another 10-15 minutes, until the potatoes are crispy. Enjoy!

*Makes 4 to 4.5 cups.*For a quick version:
Preheat the baking sheet.
Add oil, chopped potatoes, and spices directly to the baking sheet. Toss together.
