Roasted potatoes are one of my go-to side dishes, and these curry roasted potatoes are a fun version with their spicy curry flavor.
While you can get away with simply roasting potatoes with salt and pepper, why not try adding curry powder?
It's delicious! And everyone loves these potatoes.
Honestly, I couldn't take the photos fast enough. My niece and nephew swiped these roasted curry potatoes straight from the baking sheet.
Ingredients
Potatoes: Russet potatoes, yellow potatoes, or fingerling potatoes work best for roasting. For extra color, you can use purple potatoes, though they can be pricier and harder to find. Or try this recipe with sweet potatoes.
Spices: Curry powder, garlic powder, cayenne pepper, and salt season the curry roasted potatoes. Garlic powder and cayenne pepper are optional, and you can adjust the amounts based on your preferences.
If you do not want spicy roasted curry potatoes, use less cayenne pepper or omit it.
Oil: Toss the potatoes and spices in avocado oil, olive oil, canola oil, vegetable oil, or peanut oil.

How to Make Curry Roasted Potatoes
If you have an extra 10 minutes, I recommend soaking the potatoes in hot water, drying off the potatoes, and tossing them with oil and spices.
This helps remove some of the starch in potatoes, and removing the starch can help your potatoes get crispier.
Another thing that soaking and rinsing potatoes can help do is to reduce acrylamide that might form while roasting.
However, I tested both versions (one with the potatoes soaked + rinsed and one with potatoes placed directly on the baking sheet after chopping).
The most important thing to prevent sticking and produce crispier potatoes is to preheat the baking sheet.

- Chop potatoes and put them in a bowl of hot water.
- Meanwhile, put the baking sheet in the oven while it preheats.
- Drain and dry the potatoes.
Dry the mixing bowl, too.
- Add oil and spices to the potatoes.
- Stir potatoes.
- Carefully remove baking sheet from the oven, and put the potatoes in one layer.
Transfer to the oven.
- Stir halfway through cooking.
Potatoes should easily release from the baking sheet. If they don't, let them cook another 5 minutes before stirring.

*The most important thing when roasting potatoes is to preheat the baking sheet. Otherwise, your potatoes are more likely to stick.

Follow the directions, but skip the part where you preheat the baking sheet. And air fry them at 375F for 20 minutes, shaking halfway through cook time.
Quick Option: If needed, you can skip the step on soaking the potatoes.

How to Fix a Mistake
Potatoes stuck to the baking sheet: Let them cook another 5-10 minutes until they more easily release from the baking sheet. Use a thin spatula and carefully peel them off the baking sheet.
If they're still stuck, try adding 2 teaspoons of oil to the potatoes and cooking for another 5 minutes before trying to release them.
Make-Ahead Ideas
Roasted potatoes are best served freshly cooked from the oven.
However, you can chop and soak the potatoes a few hours in advance.
Storage Suggestions
Keep in an airtight container in the fridge for up to 6 days or in the freezer for up to 6 weeks.
It's best to reheat potatoes in the oven or air fryer, but it can be done in a pinch in the microwave. However, these curried roast potatoes won't be as crispy.
To reheat:
- In the oven: Place the potatoes on a baking sheet, transfer to a 325F oven, and bake for 10-20 minutes, stirring occasionally, until warmed.
- In the microwave: Place on a microwave-safe plate, and heat for 45 seconds at 100% power. Stir and microwave for another 30-45 seconds until warm.

If you don't soak potatoes before baking, they might not get as crispy. Also, they might stick to the baking sheet.
That being said, I tried roasting the potatoes without soaking and they came out pretty similar to the ones that were soaked before roasting. So if you are in a time crunch, you can skip the pressure to soak your potatoes.
