This is almost just as easy as using a boxed mix, and it's more wholesome. There's no trans fat and it's 100% whole grain
for the cornbread mix:
whole grain flour
white whole wheat, whole wheat pastry, or whole grain gluten free all purpose blend
for the cornbread:
To make the cornbread mix:
Whisk together all the ingredients. Transfer to a plastic bag and seal tightly.
Wrap if desired. Be sure you attach the recipe, so your recipient knows what to do... or just in case you forget ;)
To make the cornbread:
Put a 9 inch skillet in the oven and preheat oven to 425°F.
Put the cornbread mix into a bowl and add the egg, milk, and butter.
Whisk together until completely combined but don't over mix.
Carefully take the skillet out of the oven and pour the batter into the skillet.
Transfer skillet back to the oven and bake for 18-22 minutes until done. Cut into 8-12 slices and serve.
*This is for a 9 inch skillet. An 8 inch skillet will also work.
*To make the cornbread, you'll need:
-1 cup milk or buttermilk
-4 TBSP melted butter
