Whisk together the pumpkin, apple juice, brown sugar, cinnamon, nutmeg, ginger, cloves, and salt in a medium saucepan.
Bring to a low boil over medium heat. Partially cover and reduce heat to medium-low to simmer. Stir occasionally. {Be careful because the mixture bubbles and splatters a lot!}
Once it has reduced & thickened {takes about 30 to 35 minutes}, taste and adjust seasoning if needed.
Remove from heat, and add lemon juice and vanilla extract. Let cool and serve with apple slices, on toast, etc.
