Easy spring side dish with only two ingredients
Last week, I did a post on BLT Pasta Salad {which is quite tasty, by the way}.
I talked about how I am head over heels in love with bacon and love every minute I have with it.
I also know it's not great to spend that much time with my bacon.
However, when I have bacon in my house, I want to use it to its full advantage.
Since I usually make smaller portions of my recipes, I usually have a lot of ingredients left over. And you can imagine my sadness when I had an open pack of bacon just staring me down in my refrigerator...
I also had a poor little bunch of asparagus that was nearing its demise.
Well, bacon + asparagus = really good side dish. It also couldn't be much easier.
Snap ends off asparagus, and wash. Cut bacon slices in half. Wrap 4-5 stalks of asparagus in half slices of bacon. Bake for 30Â minutes. Done. Yum.
2 ingredients {plus salt if you want}... that's my kinda side dish
Oh and don't forget there's bacon in there, too ๐
I usually want to eat 3 or 4 but that's only 1.5 to 2 slices of bacon and a good amount of veggies
Like I said last week, bacon adds tons of flavor {in small amounts} to otherwise not so exciting things. Roasted asparagus are delicious, but they're even better when roasted with a piece of bacon wrapped around them.
I am done trying to convince you that this recipe is for you because it really just convinces you by itself...

Ingredients
- 1 lb . asparagus
- 8 slices center-cut bacon {from a 12 oz. package}
- ยผ teaspoon kosher salt optional
Instructions
- Preheat oven to 375°F. Line a baking sheet with foil. Set aside.
- Snap or cut ends off of asparagus. Cut bacon slices in half. Count asparagus and separate them in 8 sections. {You'll probably have about 4-5 stalks per section}.
- Take a section of asparagus and tightly wrap one piece of the bacon around it. Place it on the prepared baking sheet seam side down. Repeat with remaining asparagus sections.
- Roast in preheated oven for 15 minutes. Carefully flip over to cook other side of bacon. Put back in the oven and roast for another 12-15 minutes, until bacon is crispy & done. Sprinkle with salt if using. Enjoy!
