Today is my birthday (woohoo!) and Holy Smokes, this could not be a more exciting birthday present for myself... Funfetti Protein Pancakes!!!
Funfetti Protein Pancakes

Protein Pancakes {read: healthy, keep you full all morning long, great way to start you day} + the amazing Funfetti cake flavor.
In all honesty, I wasn't sure I could do it. I spent many hours searching for a healthy version of Funfetti pancakes, especially ones that did not involve using boxed cake mix {a HUGE no-no here on my blog}, and I couldn't find anything!
I felt discouraged but decided to try my stand-by pancake recipe {my protein pancakes} and just change it a little to make it have the funfetti flavor.

I was freaking out when I got these to work. You have no idea. I mean, who doesn't want breakfast that tastes like cake that you don't have to feel guilty about.
When I made my first protein pancakes, I never could have imagined the possibilities. So far, I've made regular, sweet potato, pumpkin, oven baked, and carrot cake. And now these.
These colorful, fun, amazingly delicious protein pancakes that will brighten any morning.
It certainly doesn't have to be your birthday to enjoy these. First day of school, congrats on the new job, I love you so much I'm making you these awesome pancakes because I want you to have a great day, random Tuesday, just because...
Here are a few things you should know about these Funfetti Protein Pancakes:
-These are higher in sugar. I won't be eating these everyday; they are a fun treat to have. I do eat regular protein pancakes everyday - I don't add any sugar or sprinkles {more sugar}.
-You might find that you need less sugar or no sugar at all, but my goal with these was to make these taste sweet like cake mix would make them. I used 3 tablespoons in the first batch which were delish. The second batch I made with a little less sugar and thought they were still perfectly sweet.
-Make sure you let the pancakes sit for about 10 minutes before cooking them, and be sure not to add the sprinkles until just before cooking. Otherwise, the sprinkles will bleed into the pancakes and just turn it a muddled pink color.
-Use larger sprinkles {sometimes called jimmies} instead of nonpareils. Nonpareils instantly bleed; it's best to use them when they won't be getting wet.

Funfetti Protein Pancakes
Ingredients
- 1 โ cups oats
- 1 cup cottage cheese
- 4 large eggs
- 2 teaspoon vanilla extract
- ยผ teaspoon almond extract
- 1 teaspoon baking powder
- 2 tablespoon sugar optional
- โ teaspoon salt
- 2 tablespoon sprinkles
Instructions
- Add all the ingredients but the sprinkles to a blender or food processor. Process until smooth. Let sit for about 10-15 minutes.
- Preheat a nonstick skillet or griddle over medium heat.
- Stir in sprinkles to batter. Add about ยผ cup pancake batter to skillet for each pancake.
- Cook on one side until bubbles form on top {about 3-4 minutes}. Flip and cook until the other side is done {about 2-3 minutes}.
- Repeat until all pancakes are cooked. Serve with maple syrup and butter if desired. Enjoy!
