I posted this recipe two years ago and look forward to it every year. Unfortunately, my old post's photos are less than pretty.
My windowless kitchen is beautifully lit, casting a lovely yellowish tint to all photos. Note extreme sarcasm in previous sentence. What do I do when an old recipe needs new, extra attention? I make it again.
It's good for quality control purposes, as I need to retest old recipes to ensure that they are as delicious as possible. Good news: this recipe is as delicious as possible. Plus, it gives you all the things you need on New Year's Day: black eyed peas, greens, and pork for good luck, prosperity, and wealth (or is it health?)
My parents always encouraged me to take at least one bite of the New Year's Day feast of greens, black eyed peas, and pork. But they were always small bites taken reluctantly.
Luckily, Nan {of course} introduced me to this recipe a few years ago, and I haven't looked back on those barely touched plates of pork, peas, & greens.

This soup is crazy good and even easier to boot. The amount of effort is doable even if you're hungover under the weather, so it's ideal for lazy days.
Chop two onions, some garlic, and the sausage and throw everything into a slow cooker. Take a nap, binge watch Netflix, go to work, reflect on 2014 and create goals for 2015, read a book... whatever it takes to occupy about 4-5 hours (or 8 hours on Low) for this to cook.
Honestly, you could eat it before cooking because everything {but the onions} is already cooked. It'll just taste way better if you give it those hours to simmer together and make magic.
Soup = magic. Mark my words - or mark my recipes - soup is the greatest thing ever, and this recipe proves that fact.
The only difference between this recipe and my original recipe is that you sautéed the onions and garlic with the chopped sausage. I skipped that step (saving time - whoop whoop), and it was still just as wonderful.
The only way to make this any better is to add a slice of cornbread on the side. Since cornbread is supposed to signify gold, I think I'll make a whole batch 😉
Good Luck Greens Soup
Ingredients
- 12 ounces sausage chopped
- 2 large onions diced
- 2 cloves garlic minced
- 16 ounce greens frozen or fresh
- 2 15 ounce cans black eyed peas no-salt added, drained & rinsed
- 15 ounce navy beans or Great Northern beans, drained & rinsed
- 10 ounce diced tomatoes with green chiles
- 1/2 tsp onion flakes
- 1/4 tsp salt
- 1/4 tsp red pepper flakes
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 1 bay leaf
- 4 cups chicken broth unsalted
Instructions
- Add all of the ingredients to the slow cooker and stir. Cover, and cook on high for 4-5 hours or low for 6-8 hours.

Thanks! It depends on the sausage you use. For a link sausage, you simply need to slice and add. A ground, uncooked sausage would need to be cooked and crumbled prior to adding to the slowcooker.
