    People will be begging you to make them this hearty, comforting, inexpensive, delicious Beef and Vegetable Soup recipe. Made with stew meat on the stovetop, this gluten free, dairy free beef soup has tender beef and tons of veggies for a healthy, hearty beef soup.

    Beef and Vegetable Soup from @memeinge is a hearty, comforting, inexpensive meal. This tasty, gluten free and dairy free recipe freezes well and is a great healthy homemade holiday gift

    You know how I love soup so much? Well, it's mostly thanks to my dad's rocking' soup making skills.

    I really can't think of anything better than my dad's homemade soup. {He also makes the greatest fried chicken on Earth, but that's for another post}

    Anytime I smell onions, celery, and carrots sautéing in butter, I think of one of my dad's delicious soups. Split Pea, Black Bean, Potato, French Onion, Beef & Vegetable - all so incredibly tasty that I it's impossible to pick a fave.

    Back when I was little tyke, my dad made soup lots of different soups, and we gave them to family and friends for Christmas.

    It's such a great gift idea! Do you know awesome it is to have really good, homemade soup in the freezer? It's amazing!

    Pressed for time? Broke? Not in the mood for take-out? Need some comfort food? No problem, someone gave you containers of soup for Christmas. In less than 10-15 minutes, you'll be enjoying your warm bowl of deliciousness {that's good for your heart, soul, and body}.

    I chose Beef and Vegetable Soup to give as gifts this year. It's hearty, comforting, warming, amazing, the list goes on... However, you can pick any soup that freezes well {Black Bean, Split Pea, White Bean and Turkey Chili, Lentil Chili, French Onion, Pork Posole, Salsa Lentil}.

    All you have to do is make the soup then put it in freezer-safe containers. Label it, and stick a bow on top. Or just buy those festive containers and ignore the idea about the bow.

    Your friends and family will thank you when they have a healthy & comforting meal waiting for them in their freezer. Or maybe they'll eat it the night you give it to them.

    To reheat the soup, just stick in the fridge to defrost for a few hours {don't leave on the countertop}. Then transfer contents to a saucepan, add a few tablespoons of water, and reheat over medium-low, stirring occasionally, until warmed through. Enjoy!

    {If you forget to take it out of the freezer, just take the top off, and pop in the microwave for 2 minutes on 20% power or defrost power. Then transfer to a saucepan}.

    The best part about this Beef & Vegetable Soup is that it gets better the longer it sits, so it tastes better a day or two after it's made. See... perfect for giving because you can make the soup one night, then put it in containers, and bring it to friends & family the next day {just be sure people freeze it after a couple of days}.

    This is also great meal to bring a family welcoming a new baby into their home. I feel like casseroles are the standard meal but why not give them the gift of a healthy but hearty meal?

    I forgot to mention how easy it is to make. Just brown the meat, drain if needed, sauté the veggies real quick, then add everything else. Stir and simmer for about 2 hours. Be sure to stir occasionally so the soup doesn't stick and you're done!

    Seriously, your friends and family will be begging you to make them this inexpensive {costs about $20 to serve 8-10!}, hearty, comforting, delicious Beef and Vegetable Soup every single year. Just ask my dad 😉
