You know how I love soup so much? Well, it's mostly thanks to my dad's rocking' soup making skills.
I really can't think of anything better than my dad's homemade soup. {He also makes the greatest fried chicken on Earth, but that's for another post}
Anytime I smell onions, celery, and carrots sautéing in butter, I think of one of my dad's delicious soups. Split Pea, Black Bean, Potato, French Onion, Beef & Vegetable - all so incredibly tasty that I it's impossible to pick a fave.
Back when I was little tyke, my dad made soup lots of different soups, and we gave them to family and friends for Christmas.

I chose Beef and Vegetable Soup to give as gifts this year. It's hearty, comforting, warming, amazing, the list goes on... However, you can pick any soup that freezes well {Black Bean, Split Pea, White Bean and Turkey Chili, Lentil Chili, French Onion, Pork Posole, Salsa Lentil}.
All you have to do is make the soup then put it in freezer-safe containers. Label it, and stick a bow on top. Or just buy those festive containers and ignore the idea about the bow.
Your friends and family will thank you when they have a healthy & comforting meal waiting for them in their freezer. Or maybe they'll eat it the night you give it to them.
To reheat the soup, just stick in the fridge to defrost for a few hours {don't leave on the countertop}. Then transfer contents to a saucepan, add a few tablespoons of water, and reheat over medium-low, stirring occasionally, until warmed through. Enjoy!
{If you forget to take it out of the freezer, just take the top off, and pop in the microwave for 2 minutes on 20% power or defrost power. Then transfer to a saucepan}.

I forgot to mention how easy it is to make. Just brown the meat, drain if needed, sauté the veggies real quick, then add everything else. Stir and simmer for about 2 hours. Be sure to stir occasionally so the soup doesn't stick and you're done!

Beef and Vegetable Soup
Ingredients
- 1.25 lb steak cut into bite sized pieces
- 1 onion diced
- 2 carrots diced
- 3 stalks celery diced
- 1 medium potato about 8 oz., unpeeled and chopped
- 4 cups unsalted beef broth
- 4 cups water
- 1 can no salt added diced tomatoes 14.5 oz.
- 2 (16 ounce) frozen soup mix vegetables 16 oz.
- 1 tablespoon dried parsley
- 1 teaspoon salt
- ยพ teaspoon paprika
- ยฝ teaspoon garlic powder
- ยผ teaspoon ground black pepper
Instructions
- Heat a large soup pot or Dutch oven over medium-high heat. Add the steak to the pot and cook until browned on all sides. {Drain if desired}.
- Add the onions, carrots, and celery. Sauté for 5 minutes until slightly softened.
- Add the remaining ingredients and stir well. Bring soup to a boil and reduce heat to medium-low. Partially cover pot. Simmer for at least 45 minutes or up to 2 hours, stirring occasionally. Season to taste if needed. Enjoy!
