    Caramelized Onion Omelet from Living Well Kitchen

    After Christmas Cookie Week, I'm certainly feeling the need for some healthy dishes in my life.

    Today, I have a really easy dinner that serves one or you can increase the ingredients to serve two or more.

    There are only 9 ingredients, and it takes less than 30 minutes start to finish.

    It's a perfect meal for the holiday season because it's easy, quick, and healthy.

    I love having eggs for dinner because there's something fun about eating a breakfast food at dinner. I don't really know what it is, but there's just something...

    I served this with a side salad because I am trying to get as many nutritious foods in my body as possible, but you could certainly include a piece of whole wheat toast for a little more substance.

    Now, don't you worry if you're not a great omelet maker.

    If you're not taking pictures of the omelet, there's no need to worry about it being perfect.

    Unfortunately for this un-skilled omelet maker, I did have to take pictures, but as luck may have it, I just got my brand-spankin new camera in the mail from Santa {thanks Santa! You're the best}

    It's so amazing, and I read the entire manual last night.

    Now I'm reading the Tasty Food Photography eBook from Pinch of Yum, and I'm obsessed with it. I'm contemplating taking notes. {I'm a nerd and get really excited about things}

    These pictures are pre-entire manual read, so they aren't great. But hopefully they'll keep getting better ๐Ÿ™‚

    Caramelized Onion Omelet

    Ingredients

    • 1 teaspoon olive oil
    • 1 onion chopped
    • 1 clove garlic minced
    • ยฝ teaspoon salt divided
    • 1 whole egg
    • 2 egg whites
    • 2 tablespoon 1% milk
    • few dashes of hot sauce
    • ยผ cup shredded Parmesan cheese {can substitute with Swiss or Gruyere}

    Instructions

    • Heat the oil over medium heat in a skillet. Add onion, and caramelize {read here for more info on caramelized onions}. It should take about 30 minutes but there's very little hands-on activity; just stir occasionally.
    • Add in the garlic & โ…› teaspoon salt and stir for 30 seconds. Remove from heat and set aside to cool slightly.
    • Meanwhile, whisk together the egg, egg white, milk, remaining โ…› teaspoon salt, and hot sauce.
    • Heat an 8-inch non-stick skillet over medium. Pour in eggs, and let set for 3 minutes. Gently push down the sides slightly, and tilt the pan to re-distribute the uncooked eggs {so they're not just sitting in the middle of the pan the whole time}
    • Sprinkle the eggs with onions & cheese. Let the eggs harden to your desired consistency. Then remove from heat, and fold one half over onto the other to make an omelet. Slide onto a plate & enjoy!
