Caramelized Onion Omelet
Ingredients
- 1 teaspoon olive oil
- 1 medium onion chopped
- 1 clove garlic minced
- โ teaspoon salt divided
- 2 large eggs
- 2 tablespoons water
- few dashes of hot sauce optional
- ยผ cup shredded Parmesan cheese or Swiss or Gruyere
Instructions
- Heat the oil over medium heat in a skillet. Add onion, and caramelize. It should take about 20-30 minutes but there's very little hands-on activity; just stir occasionally.
- Add in the garlic and salt and stir for 30 seconds. Remove from heat and set aside to cool slightly.
- Meanwhile, whisk together the egg, water, and hot sauce, if using.
- Heat an 8-inch non-stick skillet over medium. Pour in eggs, and let set for 3 minutes.
- Gently push down the sides slightly, and tilt the pan to re-distribute the uncooked eggs.
- Sprinkle the eggs with onions & cheese. Let the eggs harden to your desired consistency.
- Remove from heat, and fold one half over onto the other to make an omelet. Slide onto a plate & enjoy!
