After Christmas Cookie Week, I'm certainly feeling the need for some healthy dishes in my life.
Today, I have a really easy dinner that serves one or you can increase the ingredients to serve two or more.
There are only 9 ingredients, and it takes less than 30 minutes start to finish.
It's a perfect meal for the holiday season because it's easy, quick, and healthy.

I served this with a side salad because I am trying to get as many nutritious foods in my body as possible, but you could certainly include a piece of whole wheat toast for a little more substance.
Now, don't you worry if you're not a great omelet maker.
If you're not taking pictures of the omelet, there's no need to worry about it being perfect.
Unfortunately for this un-skilled omelet maker, I did have to take pictures, but as luck may have it, I just got my brand-spankin new camera in the mail from Santa {thanks Santa! You're the best}

Caramelized Onion Omelet
Ingredients
- 1 teaspoon olive oil
- 1 onion chopped
- 1 clove garlic minced
- ยฝ teaspoon salt divided
- 1 whole egg
- 2 egg whites
- 2 tablespoon 1% milk
- few dashes of hot sauce
- ยผ cup shredded Parmesan cheese {can substitute with Swiss or Gruyere}
Instructions
- Heat the oil over medium heat in a skillet. Add onion, and caramelize {read here for more info on caramelized onions}. It should take about 30 minutes but there's very little hands-on activity; just stir occasionally.
- Add in the garlic & โ teaspoon salt and stir for 30 seconds. Remove from heat and set aside to cool slightly.
- Meanwhile, whisk together the egg, egg white, milk, remaining โ teaspoon salt, and hot sauce.
- Heat an 8-inch non-stick skillet over medium. Pour in eggs, and let set for 3 minutes. Gently push down the sides slightly, and tilt the pan to re-distribute the uncooked eggs {so they're not just sitting in the middle of the pan the whole time}
- Sprinkle the eggs with onions & cheese. Let the eggs harden to your desired consistency. Then remove from heat, and fold one half over onto the other to make an omelet. Slide onto a plate & enjoy!
