    Caramelized Onion Omelette is a simple, budget-friendly meal idea that serves one with only 8 ingredients.

    1. Start by caramelizing the onions.

    2. Whisk together eggs with water and hot sauce, if desired.

    3. Pour the eggs into a skillet and cook.

      Let set for 3 minutes.

    4. Gently push down the sides slightly, and tilt the pan to re-distribute the uncooked eggs.

      So they're not just sitting in the middle of the pan the whole time.

    5. Sprinkle with cheese and caramelized onions.

      Let cook until the eggs are to your desired doneness.

    6. Remove from heat and fold over.

    7. Enjoy!

    How to Make Allergy-Friendly

    This recipe is naturally gluten-free, soy-free, and nut-free.

    Because it is made of mostly eggs, it cannot really be made egg-free.

    If you want it to be dairy-free, simply omit the cheese or sprinkle the omelet with nutritional yeast or another non-dairy cheese.

    Ingredients

    • 1 teaspoon olive oil
    • 1 medium onion chopped
    • 1 clove garlic minced
    • ⅛ teaspoon salt divided
    • 2 large eggs
    • 2 tablespoons water
    • few dashes of hot sauce optional
    • ¼ cup shredded Parmesan cheese or Swiss or Gruyere

    Instructions

    • Heat the oil over medium heat in a skillet. Add onion, and caramelize. It should take about 20-30 minutes but there's very little hands-on activity; just stir occasionally.
    • Add in the garlic and salt and stir for 30 seconds. Remove from heat and set aside to cool slightly.
    • Meanwhile, whisk together the egg, water, and hot sauce, if using.
    • Heat an 8-inch non-stick skillet over medium. Pour in eggs, and let set for 3 minutes.
    • Gently push down the sides slightly, and tilt the pan to re-distribute the uncooked eggs.
    • Sprinkle the eggs with onions & cheese. Let the eggs harden to your desired consistency.
    • Remove from heat, and fold one half over onto the other to make an omelet. Slide onto a plate & enjoy!
