I've always had a special place in my heart for sweets. Yes, I like salty snacks -- popcorn, chips, etc. -- all those things are delish. But I love me a good cookie.
Unfortunately, regular cookie consumption does not make me feel super hot.
Cookies are tasty but too much sugar and/or processed flours just makes me have a tummy ache, a headache, and feel tired (hello, sugar crash). No thank you.

However, a life without cookies is not one I want to live, so I find ways to have my cake and eat it too make cookies that don't make me feel terrible after enjoying it.
Cookies like these Cashew Sugar Cookies are what make my world go round. Maybe I'm easily amused, but the fact that I can eat these cookies for breakfast, snack, or dessert and feel good enjoying them is incredibly exciting for me!
These sugar cookies are based on my Walnut Chocolate Chip Cookies that will rock your chocolate-chip-cookie-loving world.
I've actually always liked sugar cookies more than chocolate chip cookies, so I felt like it was about time I made some cookies that appealed to my sugar-cookie-loving taste buds.
You can't go wrong with either version. You'll use nuts (cashews in this case) and dates as the base, an egg to bind, vanilla & almond extract for flavor, and chia seeds for an extra nutritious boost.
Cashews give the sugar cookie flavor when paired with the vanilla and almond extract. A touch of salt helps bring out the sweetness.
These cookies are a little sweeter when at room temperature or cold, but I prefer them right out of the oven.
These don't look like you typical sugar cookies, but they taste delicious & it's nice to know you won't have that dreaded sugar/processed food crash after eating one (or two or three).

No Sugar Added Cashew Sugar Cookies
Ingredients
- 1 cup dates
- 1 cup cashews
- 1 large egg
- 1 teaspoon vanilla extract
- โ teaspoon almond extract
- 1 teaspoon chia seeds
- ยผ teaspoon baking soda
- ยผ teaspoon salt
Instructions
- Soak dates and cashews in hot water for 10 minutes. Drain well.
- Preheat oven to 350°F. Line a baking sheet with foil. Set aside.
- Add dates to a food processor and blend for 30 seconds until relatively smooth. Add nuts and process until blended. Add egg, vanilla extract, almond extract, chia seeds, baking soda, and salt. Process until barely chunky.
- Transfer to prepared baking sheet. Place about 1 inch apart and make sure to flatten cookie before baking {they do not spread}.
- Bake 9-12 minutes. Let them cool on the baking sheet for 2 minutes before carefully removing from baking sheet to a cooling rack.

Hi, is it baking soda or baking powder used in this recipe? The ingredient list and instructions say 2 different things. Also, at what point are the chia seeds added? Please tell me the purpose of soaking the dates, the ones I have are already very soft. I feel like soaking and draining will diminish the flavor. I'm making these right now and I am excited!

I updated the recipe and instructions. It uses baking soda, and the chia seeds are added with the egg and extracts.
If you have very soft dates, I think you could skip the soaking time. I just like to soak to make sure they blend well enough with the nuts.

I think that would work!! I'm not sure what the amount would be, but the dates do turn into a paste with the mixture. Good luck!
