Tacos inspired by a crawfish boil with crawfish, sausage, potatoes, onions, garlic, and more. Spicy, filling, and mouthwateringly delicious
Occasionally, I am blessed with a food bloggers perfect storm. And when I mean storm, I don't mean a hurricane a'brewin in the Gulf. I mean culinary magic.
Those would include the times that my cravings, the sales flyer at the grocery store, and a national food holiday all coincide.
Craving: boiled crawfish
Grocery store sale: cooked & peeled crawfish
National food holiday: National Taco Day is October 4th {tomorrow}
So I understand that most people don't celebrate food holidays, but for me, food holidays are a pretty big deal. Why not celebrate food? Why not celebrate insignificant holidays?
And for a girl that is obsessed with tacos, I'd be a fool not to celebrate!
But no ordinary taco will do. And I am running low on new ideas. So I tried to focus on a protein that I haven't used yet. {See below for my round-up of previous taco recipes}.
Chicken, beef, fish, shrimp, tofu, kale & black bean - all been done before on here. Plus many more.
However, crawfish was yet to be explored, and it just happened to be on sale at my neighborhood grocery store this week. Clearly, it was a sign.
After a quick google search for crawfish tacos, I was left with very little inspiration other than just using leftover cooked crawfish and the regular taco toppings - lettuce, tomato, cheese, avocado.
That was sufficient, I guess, but not exciting. I mean, not nearly exciting enough for Taco Day. Right?
And then, the craving for boiled crawfish hit me. Fresh, hot from the pot crawfish, with potatoes and sausage and garlic and onions and corn. Cue disappointment because a crawfish boil isn't a quick, weekday meal.
But wait... what if I made tacos that were inspired by a crawfish boil? {insert pause while the wheels in my brain chrun rapidly and my mouth starts watering}...
As you can see from the photos, I obviously followed through with my ingenious idea. {insert dance moves that include socks & a big t-shirt a la Risky Business}

If you are not a crawfish fan, I feel sad for you feel free to substitute with shrimp or even chicken.
Just a quick note: everyone has their own version of what to put in a crawfish boil. And everyone has a different recipe or idea of how to season it. This is based off what I wanted to do.
Seeing as my main goal in life is to get people to eat more veggies, I packed in the veggies. I know that red bell pepper usually isn't included but I wanted some red in there and I have 10 red bell peppers in my fridge {they were on sale 2/88¢ the other day}.
Basically, these are just my take on what I like in my crawfish boil and what I wanted to be in my tacos today.
I highly recommend making these to celebrate National Taco Day!!

Crawfish Tacos
Ingredients
- 1 teaspoon olive oil
- 2 small red potatoes diced
- 1 large onion diced
- 1 medium bell pepper diced
- 4 oz mushrooms sliced
- 1 stalk celery diced
- 3 cloves garlic minced
- ยฝ teaspoon paprika
- ยผ teaspoon salt
- ยผ teaspoon cayenne pepper
- ยผ teaspoon dried thyme
- ยพ cup water
- 1 bay leaf
- 8 oz cooked and peeled crawfish
- 4 oz cooked sausage sliced
- 1 lemon
- 3 green onions diced
- 8 corn tortillas
Instructions
- Add olive oil to a large skillet and heat over medium-high. Add potatoes, onions, peppers, mushrooms, and celery. Sauté for 5 minutes, then add garlic, paprika, salt, cayenne pepper, and thyme. Stir for 30 seconds.
- Add water and bay leaf. Bring to a boil and reduce heat to a simmer. Simmer for about 7-10 minutes, stirring occasionally.
- Add crawfish and sausage, and stir well to combine. Simmer for another 5-10 minutes until most of the water has absorbed. Remove bay leaf and squeeze in juice from ยฝ lemon. Remove from heat.
- Serve in corn tortillas with lemon slices.
