Mini Hummus Muffulettas are great tailgating snacks that can be made ahead.
One of the greatest aspects of tailgating is the massive spread of snacks, treats, and drinks.
Whether you're tailgating at the game or you're just enjoying a day at a friend's, gamedays are no time to skimp on food.
Obviously, you want to contribute to the feast and preferably bring something you can make ahead of time & have prepared when you get to the party.
These Mini Hummus Muffulettas are great to make ahead since you want to give it time for all the flavors to come together.
Don't know what a muffuletta is?
It's this meat & cheese-filled sandwich with a pickled veggie and olive mixture. It's packed with flavor and every bite delivers a serious briny, salty, savory punch.
Muffulettas are a popular sandwich in New Orleans, and they're usually huge and dripping with olive-y dressing. While that's delicious and all, it's not really ideal for eating at a party.
Before we get into these mini flavorful bites, let me assure you that I am not claiming these are authentic muffulettas.
Muffulettas are often labor and time-intensive.
In contrast, these mini bites have lots of flavor without going overboard on the ingredients or time it takes to prepare.
Personally, soggy bread is not my thing. I don't care that the dressing is delicious and softens the thick muffuletta bread. My muffulettas are served on lighter bread so they don't need anything to soften.
To keep the sandwiches from being dry, I used hummus which was the absolute perfect addition.
Roasted garlic or an olive-flavored hummus would be best.
These muffulettas have prosciutto, salami, provolone, olive salad, and roasted garlic hummus.
The olive salad is a cinch to make:
- Grab a 4-ounce jar of sliced pimentos and some pickled pepperoncini peppers, and you're good to go.
- Or you can go to the deli section of your grocery store and get a cup of pickled veggies (like roasted peppers, pickled pepperoncini peppers, etc.)
Then you'll add in 3 different kinds of olives: black olive, pimento-stuffed olives, and kalamata olives.
Now it's time to assemble.
Grab hot dog buns or sub rolls, and open them. Scoop out some of the bottom half of the buns to make room for the olive mixture. Fill the bottom with olive mixture then top with salami, provolone, and prosciutto.
Smear some hummus on the other half, then close your sandwich. Slice into thirds for mini muffulettas.
Then toss in a container or plastic bag and take them to your party. No soggy sandwich worries for you thanks to that hummus.
Mini Hummus Muffulettas
Ingredients
- ยฝ cup pepperoncini peppers sliced
- ยผ cup sliced pimentos
- ยผ cup black olives sliced
- ยผ cup pimento stuffed olives sliced
- ยผ cup kalamata olives sliced
- 8 whole grain hot dog buns
- ยผ pound sliced salami
- ยผ pound sliced provolone
- ยผ pound sliced prosciutto
- ยฝ cup hummus
Instructions
- In a bowl, stir together sliced pepperoncini peppers, pimentos, black olives, pimento stuffed olives, and kalamata olives.
- Slice the hot dog buns in half, lengthwise. Scoop out some of the bread on the bottom half. Fill with olive mixture. Top with five or six slices of salami, then one slice of provolone, then two slices of prosciutto.
- Spread one tablespoon of hummus on the other half of the hot dog bun and put it on top of the prosciutto. Slice the sandwich into thirds. Repeat with remaining hot dog buns and ingredients.
