Microwave Chocolate Chip Cookie
Ingredients
- ยฝ tablespoon butter
- ยฝ tablespoon unsweetened apple sauce
- 1 teaspoon granulated sugar
- 1 ยฝ teaspoon brown sugar
- 1 tiny drop of vanilla extract
- ยฝ teaspoon flax meal
- 1 teaspoon water
- 2 tablespoon flour
- pinch salt
- pinch baking soda
- 2 teaspoon chocolate chips
Instructions
- Melt the butter in the microwave {about 60 seconds}.
- Stir in the applesauce, sugars, and vanilla.
- Add in the flax meal & water, and mix well. Let sit for 2 minutes.
- Stir in the flour, salt, and baking soda. Transfer cookie dough to a plate.
- Microwave for 50 to 75 seconds. {Mine took 65 seconds}
Here are some other things you should know:
- You can use 1 tablespoon butter instead of a combination of butter & applesauce, or you can use 1 tablespoon applesauce.
- If you use all butter, the calories and fat in the cookie will increase but will taste more like a regular chocolate chip cookie
- If you use all applesauce, the calories and fat will decrease but it will have a more cake-like texture {fluffier}. This will also make the cookie dairy free and vegan
- If you don't have flax meal, you can use 1 teaspoon egg.
- You can use gluten-free flour in place of the white whole wheat flour for a gluten-free cookie
- I didn't have brown sugar but wanted to post the recipe anyway, so my cookie has a combination of Splenda and regular granulated sugar {white sugar}. Brown sugar is much better but a girl's gotta do what a girl's gotta do to get the recipe on the blog.
- You can use 1 teaspoon Splenda and 1 ½ teaspoon brown sugar for less sugar. Or use all brown sugar.
