    About Chicken and Gravy

    This super simple chicken and gravy recipe doesn't take a lot of time and is ready in under 25 minutes.

    Pair with a simple side dish, and you have a tasty dinner everyone will love.

    You can't go wrong with the classic gravy and mashed potatoes combo (I'm a big fan of these Instant Pot Mashed Potatoes because they also have cauliflower for extra veggies).

    Or make some quick sauteed green beans from fresh or frozen and add garlic bread to soak up the extra homemade chicken gravy.

    What's more, this is an allergy-friendly dish your whole family can enjoy.

    Because unlike most gravy recipes, it is naturally gluten-free because this easy chicken gravy is made using cornstarch.

    It is also egg-free, soy-free, and nut-free. And it can easily be made dairy-free.

    Plus, you'll cook the chicken and make the gravy in the same skillet, so you don't have to do any extra dishwashing.

    Ingredients

    For the Chicken

    Oil: To cook the chicken, use olive oil, unsalted butter, avocado oil, canola oil, or vegetable oil.

    Chicken breast: This recipe was tested using skinless chicken breasts but boneless skinless chicken thighs will also work well.

    Seasoning: Season chicken with black pepper, garlic powder. Additional seasoning includes onion powder, poultry seasoning, Italian seasoning.

    For the Gravy

    Butter: For making the gravy, butter is ideal. But olive oil, avocado oil, or vegetable oil will be fine.

    Broth: Use chicken broth, chicken stock, or vegetable broth to make the gravy. In a pinch, water can be used, but you'll likely need extra spices to add flavor.

    Cornstarch: Cornstarch is easier and also gluten free. However, you can definitely use all purpose flour. See recipe tips for notes on using flour.

    Yogurt: No heavy cream needed, simply use Greek yogurt to thicken the gravy and add richness.

    How to Make Chicken and Gravy

    1. Season the chicken on both sides.

      Heat oil in a nonstick skillet.

    2. Place chicken in skillet.

      Cook until it easily releases from the pan and flip. Cook until the chicken is golden brown. Set aside once it's done.

    3. Melt butter in the skillet.

    5. Whisk together cornstarch and broth.

    6. Add in broth.

    How to Fix a Mistake

    Gravy too thin: Mix 1 teaspoon of cornstarch with 1 tablespoon of water, and stir into the gravy. Simmer, stirring often, for about 5 minutes until thickened.

    Gravy too thick: Add an extra tablespoon of chicken broth or water, and stir well. Add more as needed in tablespoon-sized increments.

    Chicken or gravy lacks flavor: Add extra seasoning or fresh herbs.

    Make-Ahead Ideas

    This chicken and gravy recipe is best served just after cooking because the gravy has the best consistency immediately after preparing.

    Plus, this is simple and quick to throw together.

    However, you can get all the ingredients measured up to 24 hours in advance so they are immediately accessible when you are ready to cook.

    Keep the chicken and gravy in an airtight container in the fridge for up to 4 days. The cooked chicken can be frozen for 4 weeks. Freezing the gravy isn't recommended.

    To reheat the chicken:

    • In the microwave: Place on a microwave-safe plate, and heat for 30 seconds at 100% power. Flip and microwave for another 30-45 seconds until warm.
    • In a skillet: In a dry skillet over medium heat, place the chicken and cook for about 1-3 minutes per side until warm.

    To reheat the gravy:

    • In the microwave: Add to a microwave-safe bowl, cover lightly with a paper towel, and microwave in 30 seconds increments, stirring each time.

    Ingredient Substitutions

    Cornstarch: Flour can be used in a pinch. However, you will cook it differently. Add the 2 tablespoons of flour (in place of 1 tablespoon of cornstarch) to the skillet with the butter. Cook, stirring constantly, for about 5 minutes then add the green onions and garlic.

    Note that using all-purpose flour will make the gravy no longer gluten free unless you use gluten-free all-purpose flour.

    How to Make Allergy-Friendly

    This chicken and gravy recipe is naturally gluten-free, egg-free, soy-free, and nut-free.

    To make it dairy-free, use a dairy-free yogurt or sour cream (but that might make the dish no longer free of soy, nuts, or gluten).

    • 4 (4-6 ounce) chicken breasts
