Soup is just one of those things that feels natural to make in a slow cooker.
And right now I'm getting ready for my first half marathon on Sunday {eek!}, so I am trying to make sure to get in some good quality carbs and lean protein.
Sweet potatoes rock for giving you good quality carbohydrates plus lots of nutrients. They are also great for satisfying your sweet tooth {I have a huge sweet tooth}.

Yes, this is a savory recipe but eating sweet potatoes helps my sweet tooth for some reason ~ sweet veggies {like sweet potatoes and onions, which are both in this soup} are thought to help quell your sweet tooth.
Plus having a warm bowl of soup is great in this chilly, flaky weather we are having.
I added some chicken from my Perfect Roasted Chicken to add some good protein. You can also add some cooked chickpeas or just eat this as a starter or side dish.
Feel free to use thyme in place of the rosemary, but I love the combination of rosemary and sweet potatoes.
This soup is thick and creamy. It's savory with a hint of sweetness. The fiber also makes this really filling, so a little goes a long way.

Sweet Potato Bisque
Ingredients
- 1.5 pounds sweet potatoes chopped & unpeeled (about 4 potatoes)
- 1 large onion chopped
- 2 cloves garlic minced
- ยฝ teaspoon fresh rosemary minced
- 2 cups water or vegetable or chicken broth
- ยฝ teaspoon salt
- ยฝ teaspoon paprika
- ยผ teaspoon cayenne pepper
- 1 cup 2% milk or coconut milk
Instructions
- Add sweet potatoes, onion, garlic, rosemary, water or broth, and salt to the slow cooker. Stir well. Cover and set on High for 3 hours or Low for 5 hours.
- Add remaining ingredients and stir well. Use an immersion blender to completely blend together or carefully transfer ingredients to a blender and combine.
- Serve as a starter or side dish, or top with chicken, chickpeas, and/or parmesan and enjoy as a main course. Enjoy!
