Roasted Sausage and Veggies
Ingredients
- 4 small potatoes chopped (about 20 ounces)
- 2 medium onions chopped
- 1 head cauliflower chopped
- 4 medium bell peppers chopped, any color
- 1 tablespoon olive oil divided, or avocado oil
- 12 ounces cooked chicken sausage sliced
Instructions
- Preheat the oven to 425*F. Line two baking sheets with foil or parchment paper
- Add the potatoes and onions to a baking sheet and toss with ยฝ tablespoon oil. Transfer to oven
- Add the cauliflower and bell peppers to the other baking sheet with the reamining ยฝ tablespoon oil and toss. Transfer to the oven.
- Roast for 25 minutes.
- Stir and add sausage to the baking sheet (either pan or both).
- Roast another 15-20 minutes, until veggies & sausage are lightly browned. Remove from oven and enjoy!
