    Roasted Zucchini Hearts with Goat Cheese from Living Well Kitchen

    The fact that I am in the middle of packing to take a 7-day road trip and move across the country has made my brain a little off. To be honest, I'm just shocked that I have actually been posting.

    Unfortunately (or fortunately, take your pick), I haven't been very organized this week. I have basically just been posting cheesy recipes and/or roasting vegetables on the blog, but I don't hate either one of those things. I already talked about how much I love roasted vegetables yesterday (and pretty much every other week for the past five years), so I'll skip that for this post.

    This post, we're gonna talk about making fun shapes with your summer produce because it's Recipe ReDux time. This month is "Get Your Fruits and Veggies in Shape: With produce galore, now's a great time to enjoy lots of fruits and vegetables. Show us how you're serving the bounty of gardens and orchards in creative cuts and shapes like ribbons, noodles, cut-outs, etc."

    Roasted Zucchini Hearts with Goat Cheese from Living Well Kitchen

    My previously noted lack of brain power has blessed me with the inability to be creative with my fruits & veggies, so I'm resorting to something I've done in the past with carrots: make heart shapes.

    It's pretty easy to do and makes your veggies a little more fun which is always a good thing. I roasted them because duh, roasted vegetables. And then I topped them with goat cheese because duh, goat cheese.

    Roasted Zucchini Hearts with Goat Cheese from Living Well Kitchen

    I made a video because it's much easier to explain how to do it, but I'll attempt it in words: cut a lengthwise slice a little less than halfway through the zucchini. Then cut another a little bit away from it to make a little v-slice that you pop out. Now you slice off a little bit of the peel in the sides to give it more of a heart shape. Slice it horizontally and voila! You have heart-shaped zucchini slices!

    A little note: I made this video at 6pm last night and I made it on a whim.

    Basically, it was not at all planned, so don't expect a fabulous performance. I just really wanted you to see exactly how to slice the zucchini to make it into hearts.

    Ingredients

    • 1 pound zucchini
    • 1 tablespoon olive oil
    • ยผ teaspoon salt
    • ยผ teaspoon pepper
    • 2 ounces crumbled goat cheese

    Instructions

    • Preheat oven to 425*F. Line a baking sheet with foil for easier clean up if desired.

    To make the zucchini hearts:

    • Start by making a full length slice about โ…“ of the way into the zucchini.
    • Make another full length slice about a quarter of an inch away from your first slice. Remove the slice.
    • Make a very thin slice along each edge of the zucchini to make it look more heart shaped.
    • Slice your zucchini horizontally into quarter inch slices to make zucchini hearts.

    To roast:

    • Add oil to a baking sheet and gently toss with the zucchini hearts. Season with salt and pepper. Feel free to use any other seasonings if desired. I used salt and garlic pepper.
    • Add zucchini hearts to the oven preheated to 425*F. Set the timer for 20 minutes.
    • Carefully stir your zucchini hearts and roast another 10-15 minutes until your zucchini hearts are golden brown. Remove from oven and transfer to a plate.

    To serve:

    • Top with crumbled goat cheese. This is delicious served warm or at room temperature. Enjoy!
