Blueberry protein pancakes are a great way to start your day. They are full of fiber, protein, and most importantly, flavor.
We all know about my love of pancakes, and to say "I like blueberries" would be the biggest understatement of the year.
Put them together for a tasty blueberry pancake.
These blueberry protein pancakes are quite simple. You just blend together the pancake ingredients and stir in some blueberries.
If you've never made my protein pancakes, you might find the ingredients list a little bizarre. However, I need you to trust me that these pancakes are delish! Even if you are not a fan of cottage cheese, you will not detect it in these pancakes. They just taste like pancakes.
For this blueberry pancake version, I added a little lemon juice because it really brings out the blueberry flavor. It's not mandatory but it sure is good {I made versions with and without, and I liked the lemon version a little better}.
I like extra blueberries in my pancakes because, like I said, I love blueberries.
Blueberries add tons of flavor without added sugar. Did I mention that blueberries are packed with antioxidants, fiber, and wonderfulness? Yeah, blueberries are superheroes. Delightful, tasty superheroes.
These blueberry protein pancakes are one of the best ways to start your day. They are full of fiber, protein, and most importantly, flavor.
If you need a little extra sweetness, I recommend a touch of real maple syrup. Maybe a little pat of butter on top, too.
Blueberry Protein Pancakes
Ingredients
- 4 large eggs
- 1 cup cottage cheese
- 1 cup oats old fashioned or quick
- 1 teaspoon baking powder
- 1 cup blueberries
- 2 teaspoon coconut oil optional
- maple syrup and/or butter for serving
Instructions
- Put the eggs, cottage cheese, oats, and baking powder in a food processor or blend. Blend until completely combined. Stir in blueberries, and let sit for about 10 minutes.
- Meanwhile, heat a skillet over medium heat. Add oil and let melt {or use a non-stick skillet or griddle}. Pour pancake batter {about ⅓ cup} into the skillet and cook until little bubbles form on pancake surface - this should take about 2 minutes. Flip pancake and cook another few minutes until pancake is done.
- Repeat with remaining batter. Serve warm with optional maple syrup and/or butter. Enjoy!

Thanks Patricia! You can leave out the coconut oil -- that will definitely help cut back on the fat. Also, you could use reduced-fat cottage cheese {but make sure that it doesn't have added sugar}. Hope that helps! Enjoy 🙂
