    It's no secret that I love my freezer, but sometimes it can get a little overcrowded. To prevent this from happening, I try to do a freezer clean-out every time the seasons change... sort of like a spring cleaning every three months.

    My most recent spring cleaning of the freezer reminded me that I had my favorite veggie burgers hanging out in there, so I decided to turn them into a breakfast burger considering I always have eggs in my fridge because they are such a versatile protein source full of vitamins.

    A breakfast burger is a great meal option no matter what time of day. It’s satisfying, filling, and can be a simple & healthy choice especially in the case of this California Breakfast Burger made with only a few ingredients.

    I’m a huge fan of eating breakfast for dinner since it is usually more budget friendly and can be made quickly, and this California Breakfast Burger is a great option.

    Frozen foods offer great value, from the perfectly-portioned meals to ingredients and produce that leave nothing to waste. Refrigerated foods use quality, real ingredients high in protein that are simple, fresh and close to the farm.

    A California Breakfast Burger is a breakfast burger made with a vegetarian MorningStar Farms® Spicy Black Bean Burger topped with an Eggland's Best® egg, salsa and avocados.

    How to Make a Breakfast Burger

    1. Toast the bun.
    2. Cook the MorningStar Farms® Spicy Black Bean Burger according to the package directions, and fry the egg.
    3. Mash the avocado.
    4. Assemble the burger.
    5. Enjoy!

    Tips for Making a Breakfast Burger

    The best ingredients for the recipe

    MorningStar Farms® Spicy Black Bean Burgers are a delicious vegetarian burger option to make a hearty and healthy breakfast sandwich. They have 9 grams of protein and 4 grams of fiber to add to the satiety of this tasty breakfast burger.

    Eggland's Best® egg eggs offer a significant source of choline, biotin, selenium, and Vitamins D, E, and B12. Plus, they have omega-3s and protein.

    Make Ahead Tips

    I don't recommend making this ahead of time. You don't need to make it ahead of time because it can be done in no time. However, if you are desperate to make ahead of time, you can cook the veggie burger and fry the egg in advance and keep in the fridge. Then reheat everything when you're ready to serve and assemble the burger.

    Variations

    Substitutions:

    For an alternative to the MorningStar Farms® Spicy Black Bean Burgers, you can use the Morningstar Farms® Garden Veggie Burger, Tex-Mex Burger, or the Veggie Lovers Vegan Burgers. The vegan burgers are great if you want to make this dairy free.

    You can also add cheese like cheddar or mozzarella to add a little extra pizazz to your breakfast burger.

    Alternative prep & cooking methods:

    You can microwave the veggie burger and toast the hamburger bun in a toaster or oven. If you don't want to use the egg, skip it.

    Storage Tips:

    This is best enjoyed immediately after serving, which is why I love making just enough servings each time you are preparing it. Like I mentioned before, it takes about 15 minutes to make and is quite easy.

    What to serve with this dish

    This breakfast burger is a complete meal in one, and I like to enjoy it with a cup of tea or coffee to start my day. For a little extra veggies, feel free to add a few leaves of lettuce or serve with a side salad.

    Ingredients

    • 1 whole grain hamburger bun
    • 1 MorningStar Farms® Spicy Black Bean Burger
    • 1 large Eggland's Best® egg
    • 1/2 medium avocado
    • 2 tablespoons salsa
    US Customary - Metric

    Instructions

    • Toast the hamburger bun.
    • Heat a large skillet over medium heat. Cook the MorningStar Farms® Spicy Black Bean Burger on one side of the skillet.
    • Fry the egg in the other side of the skillet.
    • Meanwhile, mash the avocado onto the toasted hamburger bun.
    • When the egg is done, top the avocado-covered hamburger bun with the black bean burger. Top with the fried egg. Spread salsa onto the egg, and cover with the top half of the hamburger bun. Enjoy!
