    A meal in minutes.

    That phrase is music to my ears. Yes, I love cooking. Yes, I love going to the grocery store. Yes, I love all things food related. But sometimes I don't the energy to cook or don't have time to go to the grocery store or just am not in the mood.

    And ya know what? That's OK! We're all human and no one should be expected to crank out meals full of veggies and lean protein with a side of whole grain every single day. Even if you're a dietitian, a food blogger, or both.

    If you never feel lazy and/or that you don't have time, you might want to go ahead and either skip to the recipe or find a new blog to read because I am all about the meals made in minutes and proud of it.

    Ok so for this simple meal, you need four ingredients. One of those is water.

    It should take about 15 minutes from start to finish. And to prove this, I did a demo on Facebook Live.

    You can easily change up this recipe. Use a different green instead of cabbage. I love spinach and kale. Or add some other veggies too. Mushrooms are one I use a lot in this dish and love.

    If you are avoiding a certain ingredient, make sure your sausage doesn't have it. The sausage I was using is dairy and gluten-free, but you'll want to double if that's an issue for you or someone you are serving.

    Other than that, this recipe couldn't be much easier. Feel free to double it for more people.

    If you're just serving one, make enough for two people and save the leftovers for lunch tomorrow.

    Oh and don't forget your starch! My personal preference is a baked sweet potato or a regular potato. You could also serve it with cooked rice or quinoa or even just a slice of bread.

    Ingredients

    • 12 ounces chicken sausage, sliced
    • 6 cups shredded cabbage about ½ small cabbage
    • 3 tablespoons water
    • 2 teaspoons mustard

    Instructions

    • Preheat a skillet to medium-high heat. Add the sliced sausage and cook in one even layer for 5 minutes, until browned on one side. 
    • Stir and add in shredded cabbage. Stir often for about 5 minutes until cabbage is lightly browned and wilted.
    • Add water and mustard and stir to completely coat the sausage & cabbage.
    • Cook for 5 minutes, stirring occasionally until most of the liquid has been absorbed.
    • Serve with baked or roasted potatoes or over cooked rice or quinoa. Enjoy!

    Notes

    *You can add additional veggies or use another green in place of the cabbage, like spinach or kale. 
    *Make sure your sausage is dairy free if needed.
    *Any mustard works. Recipe was tested using spicy mustard, yellow mustard, as well as dijon mustard instead of spicy mustard.
    *Makes about 3 cups.
